Recipe: coconut banana bread

A time ago I found 3 bananas that I forgot that I had… Of course where these overripe. But I didn’t want to throw them away. So I decided to make instead a coconut banana bread with it. Just because it love the combination from coconut with bananas. This bread is also the perfect snack!

What do you need?

  • 3 ripe bananas
  • 250g floor
  • 3 eggs
  • 125g butter
  • 150g sugar
  • 1 teaspoon cinnamon
  • a pinch of salt
  • baking powder
  • 1 teaspoon lemon juice
  • 60g coconut powder

How to make this delicious coconut banana bread?

Preheat the oven at 180°. Late the butter melt and grease your baking form. Mix the sugar with the eggs and add the melted butter to this. Then it’s time to add the floor, baking powder, salt, cinnamon, lemon juice and the coconut powder. Mash the bananas through this and the best way to do this is with a fork. Mix this very good and then you can put the dough into the baking form. Late this bake for 45min at 180°. If you bread isn’t ready after 45 min, then let it bake for a few extra minutes. And when it’s ready you can let it cool down.

I find this banana bread the perfect snack. I personally eat it before or after my workout. Because than I got the feeling that it gives me more energy. But maybe this is just a thought from me, hahah. But the combination from the banana bread with coconut is just to good! What is also good is, is to put a bit of Greece yogurt on this! A yumm combination!
